
How to Check Oven Temperature Properly at Home

A cake that browns too quickly on top, a roast that takes far longer than the recipe says, or biscuits that are burnt at the edges and pale in the middle can all point to the same problem: the oven temperature on the display or dial is not the temperature inside the cavity.
Learning how to check oven temperature can save wasted food and take the guesswork out of whether your electric oven needs attention. A small difference is normal, especially as an oven cycles on and off. A large or consistent difference is not something to ignore.
What you need to check oven temperature
The simplest tool is an oven thermometer designed to sit inside the oven. Choose a basic analogue or digital thermometer that clearly shows temperatures in Celsius and is rated for oven use. It does not need to be expensive, but it should be easy to read through the oven door.
Avoid using a meat probe, room thermometer or any thermometer not marked as suitable for oven temperatures. They may not read accurately at high heat and can be damaged.
Before testing, make sure the oven is empty apart from the shelves and thermometer. Baking trays, casserole dishes and heavy pizza stones absorb heat and can affect how quickly the oven warms up. If the oven is visibly dirty, clean away heavy grease first. Burnt-on residue can smoke during a longer test and makes it harder to judge what is happening.
How to check oven temperature with an oven thermometer
Put the thermometer on the centre shelf, roughly in the middle of the oven. Do not place it against the back wall, directly under a grill element, or on the oven floor. Those areas can be much hotter than the space where food normally cooks.
Set the oven to a common cooking temperature, such as 180°C for a conventional oven or 160°C fan. Close the door and allow it to preheat fully. The preheat light going out is a useful guide, but it does not always mean every part of the oven has settled at the chosen temperature.
Leave the thermometer in place for another 15 to 20 minutes after the oven says it is ready. Then check the reading through the glass if possible. Opening the door lets out a lot of heat, so if you need to open it, do so briefly and allow the temperature to recover before taking a final reading.
Write down the thermometer reading, then leave the oven running and check it two or three more times over the next 20 minutes. Electric ovens heat in cycles. The elements switch on to bring the temperature up, switch off once it reaches the target, then come back on as it drops. One reading alone can be misleading.
For a more useful result, test at two temperatures, such as 160°C and 200°C. If the oven is five or 10 degrees out at both settings, you may be able to work around it while arranging a repair. If it is 30 degrees low at one setting and 15 degrees high at another, the controls may not be regulating heat correctly.
What counts as an acceptable difference?
Most domestic ovens will move above and below the set temperature as they cycle. A variation of around 10°C either side of the setting is usually not a major concern. The average temperature over time matters more than the highest or lowest point you see.
A consistent difference of 15°C to 20°C is worth monitoring, particularly if cooking results have changed. If the oven is regularly 25°C or more too hot or too cool, it is likely to affect everyday cooking and should be investigated.
Bear in mind that an oven thermometer is a guide, not laboratory equipment. If the reading looks wildly wrong but food is cooking normally, try a second thermometer before assuming the oven has failed. On the other hand, repeated undercooked or overcooked food is a useful real-world sign that something is not right.
Check whether the heat is even as well as accurate
An oven can reach the right average temperature yet still cook badly because the heat is uneven. This is especially noticeable with fan ovens, where the fan should move heat around the cavity.
A straightforward test is to bake a tray of evenly spaced slices of white bread at a moderate temperature for a few minutes. Watch how evenly they toast. If one side browns much more quickly, the centre stays pale, or the back burns while the front barely colours, there may be a circulation, element or door-seal issue.
Do not rely on this test alone, as shelf position and the type of oven both make a difference. But when uneven browning is paired with an inaccurate thermometer reading, it gives a clearer picture for an engineer.
Signs that point to a fault
A temperature issue does not always mean the thermostat itself is at fault. Modern electric ovens use a temperature sensor and electronic control board in many models, while older appliances may use a mechanical thermostat. Other parts can create similar symptoms.
Look out for these warning signs:
The oven takes much longer than usual to heat up, or never reaches the selected temperature.
Food burns on the top or bottom while the rest remains undercooked.
The temperature keeps rising well past the setting and does not settle.
The fan runs but the oven does not get properly hot, or the fan has become noisy.
One cooking function works but another does not, such as fan oven working while conventional heat fails.
The oven trips the electrics, shows an error code, smells of burning insulation or has visible damage.
A failed fan element is a common cause of poor heating in fan ovens. A faulty thermostat, sensor, relay or control board can cause the oven to run too hot, too cool or unpredictably. A damaged door seal can also let heat escape, making the oven work harder and lengthening cooking times.
Before you book a repair
There are a few safe checks worth making. Confirm you are using the correct setting, as grill, fan, conventional and defrost functions behave very differently. Check that the oven door closes firmly and that the rubber seal is not split, loose or flattened. Also make sure shelves and trays are not blocking the fan cover or stopping the door from shutting completely.
If your oven has recently had a power cut, check the clock and any automatic cooking timer. Some models will not heat normally until the time has been reset or the automatic programme has been cancelled.
Do not remove panels, touch wiring or try to adjust a thermostat yourself. Electric ovens contain live components and high-temperature connections. Switching the appliance off at the wall is sensible if it is overheating, tripping the supply or smelling burnt, but a proper diagnosis needs the appliance to be tested safely.
Can you keep using an oven that is running out of temperature?
It depends on the size of the error and the symptom. If the oven is consistently around 10°C low, heats evenly and has no electrical warning signs, you may be able to compensate temporarily by increasing the setting slightly and allowing extra cooking time. Use the oven thermometer rather than relying solely on the dial.
That is not a good long-term fix for an oven that overheats. Excessive heat can ruin food, damage cookware and, in some cases, point to a control fault that is getting worse. Stop using the oven and arrange help if it cannot control its temperature, trips the consumer unit, produces smoke or has a burning smell.
